Product Description

Polyglycerol polyricinoleate (PGPR), E476, is an emulsifier made from glycerol and fatty acids. It is a yellowish, viscous liquid and is strongly lipophilic: it is soluble in fats and oils and insoluble in water and ethanol.

Key Benefit: In chocolate and similar coatings, PGPR is mainly used to reduce viscosity by decreasing the friction between solid particles like cacao, sugar, and milk.

It is typically used at low levels (below 0.5%) to improve flow behavior and texture in baked goods, spreads, and salad dressings.
